Equipment

  • Instant Pot

Ingredients

  • 1 onion chopped
  • 1 lbs pinto beans dry
  • 1 tsp chili powder
  • 1 tsp cumin
  • 4 cloves garlic
  • 6 cup water
  • 1 tsp salt
  • 0.25 tsp sweet paprika
  • 0.25 tsp black pepper
  • 1 avocado toping

Instructions

  • Saute chopped garlic and onion for about 5 minutes. For an oil free dish, use a little bit of water.
  • Rinse the dry beans in cold water and add them to the Instant Pot.
  • Add the water and spices.
  • Cook on high pressure for 40 minutes. Let 20-30 minutes to naturally release pressure.
  • Remove Instant Pot lid and remove about two cups of liquid depending on the consistency that you prefer. You want to keep this liquid on the side just in case you want to add some later (next step).
  • Use the immersion blender until the smooth consistency is achieved.

Notes

  • Goes well as a side for yummadillas.
  • Recipe adapted from Nora Cooks.
