Equipment

  • Griddle

Ingredients
 
 

  • 2 cup almond milk or other plant based milk
  • 2 tbsp apple cider vinegar
  • 2 cup whole wheat pastry flour
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • ΒΌ tsp ground cinnamon optional

Instructions
 

  • Mix the apple cider vinegar and milk in a medium bowl and let it sit for 5 minutes.
  • Mix all your dry ingredients in a large bowl.
  • Mix the dry and wet ingredients. Mix until homogeneous.
  • Let the batter sit for 10 minutes. In the meantime heat the griddle on medium heat.
  • Pour β…“ cup (~120 ml) batter onto the griddle and cook for about two minutes on one side. Flip and cook for another minute or so until golden brown.

Notes

  • Instead of using a mixture of almond flour and whole wheat pastry flour, you can use whole wheat pastry flour entirely (for fluffier pancakes).Β 
  • Serve with berries, banana slices, walnuts and/or pecans.Β Β
