- 2 cup almond milk or other plant based milk
- 2 tbsp apple cider vinegar
- 2 cup whole wheat pastry flour
- 2 tsp baking powder
- 1 tsp vanilla extract
- ¼ tsp ground cinnamon optional
Mix the apple cider vinegar and milk in a medium bowl and let it sit for 5 minutes.
Mix all your dry ingredients in a large bowl.
Mix the dry and wet ingredients. Mix until homogeneous.
Let the batter sit for 10 minutes. In the meantime heat the griddle on medium heat.
Pour ⅓ cup (~120 ml) batter onto the griddle and cook for about two minutes on one side. Flip and cook for another minute or so until golden brown.
- Instead of using a mixture of almond flour and whole wheat pastry flour, you can use whole wheat pastry flour entirely (for fluffier pancakes).
- Serve with berries, banana slices, walnuts and/or pecans.
