Summer salad with oil-free dressing

Ingredients
 
 

  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 bell pepper red, orange or yellow – chopped
  • ½ cup red onion diced
  • 1 pear chopped
  • ¼ cup walnuts chopped

3-2-1 salad dressing

  • 3 tbsp balsamic vinegar
  • 2 tbsp mustard
  • 1 tbsp maple syrup
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions
 

  • Prepare the 3-2-1 dressing by mixing all ingredients and set aside.
  • Mix all ingredients, including the dressing, and toss to combine.

  • 3-2-1 dressing was adapted from Ann and Jane Esselstyn’s cookbook.
