Ingredients
 
 

  • 1 bell pepper red
  • 1 tbsp sweet paprika
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ tsp salt
  • ¼ tsp ground pepper
  • ⅛ tsp cayenne pepper
  • 3 cup almond milk unsweetened
  • 2 tbsp almond butter
  • 2 tbsp soy sauce
  • 1 tsp liquid smoke optional
  • 1 cup corn frozen or from a can
  • 16 oz penne pasta whole grain , uncooked
  • ½ cup tomato sauce
  • 2 cup water

Instructions
 

  • Mix all spices in a small bowl.
  • Cook the diced red bell paper in a bit of water for 5-7 min.
  • In a large bowl mix the almond milk, water, almond butter, soy sauce and liquid smoke and whisk until combined.

  • Add the spice mix to the pot with the bell peppers and cook for 30-45 s.
  • Add the almond milk mixture, along with the rest of the ingredients, except for the tomato sauce, in the pan.

  • Shimmer covered for 10-15 min on the low setting stirring from time to time..
  • Stir in the tomato sauce and mix well.
