
Pasta Santa Fe
1-pot pasta with cajun sauce
Ingredients
- 1 bell pepper red
- 1 tbsp sweet paprika
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- ½ tsp salt
- ¼ tsp ground pepper
- ⅛ tsp cayenne pepper
- 3 cup almond milk unsweetened
- 2 tbsp almond butter
- 2 tbsp soy sauce
- 1 tsp liquid smoke optional
- 1 cup corn frozen or from a can
- 16 oz penne pasta whole grain , uncooked
- ½ cup tomato sauce
- 2 cup water
Instructions
- Mix all spices in a small bowl.
- Cook the diced red bell paper in a bit of water for 5-7 min.
- In a large bowl mix the almond milk, water, almond butter, soy sauce and liquid smoke and whisk until combined.

- Add the spice mix to the pot with the bell peppers and cook for 30-45 s.
- Add the almond milk mixture, along with the rest of the ingredients, except for the tomato sauce, in the pan.

- Shimmer covered for 10-15 min on the low setting stirring from time to time..

- Stir in the tomato sauce and mix well.
