- 1 bell pepper red
- 1 tbsp sweet paprika
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- ½ tsp salt
- ¼ tsp ground pepper
- ⅛ tsp cayenne pepper
- 3 cup almond milk unsweetened
- 2 tbsp almond butter
- 2 tbsp soy sauce
- 1 tsp liquid smoke optional
- 1 cup corn frozen or from a can
- 16 oz penne pasta whole grain , uncooked
- ½ cup tomato sauce
- 2 cup water
Mix all spices in a small bowl.
Cook the diced red bell paper in a bit of water for 5-7 min.
In a large bowl mix the almond milk, water, almond butter, soy sauce and liquid smoke and whisk until combined.
Add the spice mix to the pot with the bell peppers and cook for 30-45 s.
Add the almond milk mixture, along with the rest of the ingredients, except for the tomato sauce, in the pan.
Shimmer covered for 10-15 min on the low setting stirring from time to time..
Stir in the tomato sauce and mix well.
