Equipment

  • Stand mixer

Ingredients
 
 

  • 1 cup berries fresh or frozen. For frozen see notes below.
  • 1 cup chickpea aquafaba all the liquid from a 15 oz can
  • 1 tbsp berry spread any type of berry

Instructions
 

  • Drain a can of chickpeas and place the liquid (i.e. aquafaba) in a bowl of the stand mixer. You will not use the chickpeas.

  • Whip the aquafaba on the highest speed setting until you get a white foam with stiff peaks. This step takes 5-7 min.

  • Add the berries and spread gradually while continuing to whip.

Notes

  • If using frozen berries, you have to boil together with the berry spread to form a sauce. Let the sauce cool to room temperature before adding it to the whipped aquafaba.  
  • Serve fresh because the components separate in a few hours.
