Ingredients
 
 

  • cup whole wheat flour
  • ½ cup all-purpose flour
  • tsp active dry yeast
  • 2 tsp sugar
  • 1 tsp salt
  • ½ tsp baking soda
  • cup water warm (~approx 125° F / 50° C)

Instructions
 

  • Mix the yeast, sugar and 1/2 cup of warm water in a large bowl and let it rest for about 10 minutes or until the mixture becomes bubbly.
  • Shift the flower over the yeast mixture. Add the salt and baking soda.
  • Start kneading (use the lowest speed for a stand mixer) and slowly add the remaining water. Knead for 7-10 min.
  • Cover the bowl with plastic wrap and let it rest for two hours for the first rise. Here is an image before the rise.

  • The dough will double in size after two hours. If you want to eliminate the sugar, let it rise at room temperature for 12 hours. Here is an image after two hours.

  • Divide and shape the dough into 6 balls on a floured surface. Place the balls on a baking sheet lined with parchment paper, making sure that they are at least 2 inch apart because they will expand.
  • Cover the balls with a clean damp cloth towel and let them rest for 1 h for the second rinse.
  • Preheat the oven at 375°F.
  • Remove the towel and bake the buns for 25 min, or until they are golden brown.
