
Corn bread muffins
1-bowl easy vegan corn bread
Ingredients
- 1 cup cornmeal
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 cup almond milk
- ½ cup applesauce
Instructions
- Preheat the oven at 375 °F.
- Mix all dry ingredients in a large bowl.

- Add the almond milk and applesauce to the bowl and mix gently. Let the batter rest for 5 min.

- Line a muffin pan with muffin liners (ideally the reusable type).

- Divide the batter between 12 muffin cups. Bake for 20-25 minutes.
