Ingredients
 
 

  • 1 cup cornmeal
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup almond milk
  • ½ cup applesauce

Instructions
 

  • Preheat the oven at 375 °F.
  • Mix all dry ingredients in a large bowl.
  • Add the almond milk and applesauce to the bowl and mix gently. Let the batter rest for 5 min.
  • Line a muffin pan with muffin liners (ideally the reusable type).
  • Divide the batter between 12 muffin cups. Bake for 20-25 minutes.
