
Fruit and nut sweet bread
1-bowl oil free and sugar free sweet bread
Ingredients
- 2 tbsp ground flaxseed
- 6 tbsp water
- ½ cup applesauce
- 2 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup almond milk
- 2 cup dried fruit chopped (e.g. apricots, raisins, cranberries)
- ½ cup walnuts chopped
- 1 tsp vanilla extract
- 1 tsp rum extract
- 1 tsp orange zest zest of one orange
Instructions
- Preheat the oven at 350 °F (approx. 180 °C).
- In a large bowl mix the flax-meal with water and applesauce and let sit for 5 min.
- Add the flour, baking powder and baking soda to the bowl and mix. Next, stir in almond milk, vanilla, rum essence and orange zest to the bowl.
- Chop the fruits and nuts and fold them into the batter.

- Transfer the batter into a loaf pan and bake for 45 min.

- Cool in the pan for 10 -20 min before transferring to the cooling rack.
