Ingredients
 
 

  • 2 tbsp ground flaxseed
  • 6 tbsp water
  • ½ cup applesauce
  • 2 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup almond milk
  • 2 cup dried fruit chopped (e.g. apricots, raisins, cranberries)
  • ½ cup walnuts chopped
  • 1 tsp vanilla extract
  • 1 tsp rum extract
  • 1 tsp orange zest zest of one orange

Instructions
 

  • Preheat the oven at 350 °F (approx. 180 °C).
  • In a large bowl mix the flax-meal with water and applesauce and let sit for 5 min.
  • Add the flour, baking powder and baking soda to the bowl and mix. Next, stir in almond milk, vanilla, rum essence and orange zest to the bowl.
  • Chop the fruits and nuts and fold them into the batter.
  • Transfer the batter into a loaf pan and bake for 45 min.

  • Cool in the pan for 10 -20 min before transferring to the cooling rack.
