- 2 tbsp ground flaxseed
- 6 tbsp water
- ½ cup applesauce
- 2 cup whole wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup almond milk
- 2 cup dried fruit chopped (e.g. apricots, raisins, cranberries)
- ½ cup walnuts chopped
- 1 tsp vanilla extract
- 1 tsp rum extract
- 1 tsp orange zest zest of one orange
Preheat the oven at 350 °F (approx. 180 °C).
In a large bowl mix the flax-meal with water and applesauce and let sit for 5 min.
Add the flour, baking powder and baking soda to the bowl and mix. Next, stir in almond milk, vanilla, rum essence and orange zest to the bowl.
Chop the fruits and nuts and fold them into the batter.
Transfer the batter into a loaf pan and bake for 45 min.
Cool in the pan for 10 -20 min before transferring to the cooling rack.
