
Mimi’s beans
Simple and delicious beans
Ingredients
- 2 lbs navy beans
- 3 carrots
- 3 onion
- 4 cloves garlic
- 1 parsnip optional
- 1 red pepper
- 15 oz tomato sauce
- 2 bay leaves
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Cook the beans using a pot or instant pot, or use canned beans. Note: if you are using a pot on the stove you will have to soak the beans overnight.
- Chop all veggies and cook them in a large pot for about 20 min.

- Add the cooked beans to the veggie pot.
- Add the tomato sauce and the spices and water to reach the desired consistency. Then cook for 10 min.

Notes
- Can be served with bread or corn bread
