Ingredients
 
 

  • 2 lbs navy beans
  • 3 carrots
  • 3 onion
  • 4 cloves garlic
  • 1 parsnip optional
  • 1 red pepper
  • 15 oz tomato sauce
  • 2 bay leaves
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Cook the beans using a pot or instant pot, or use canned beans. Note: if you are using a pot on the stove you will have to soak the beans overnight.
  • Chop all veggies and cook them in a large pot for about 20 min.

  • Add the cooked beans to the veggie pot.
  • Add the tomato sauce and the spices and water to reach the desired consistency. Then cook for 10 min.

Notes

  • Can be served with bread or corn bread
