Mix the water and flaxseeds and let it sit for 10 minutes.
Add the rolled oats in the food processor and mix for 1-2 minutes until the oat flour is obtained.
Mix the apple cider vinegar with the plant-based milk in a bowl. Stir for about 30 seconds.
Add the applesauce, vanilla extract and the maple syrup to the milk/vinegar bowl and stir.
Mix the oat flour, whole wheat flour, baking powder, salt and ground cinnamon in a separate bowl. We'll call this the dry bowl.
Add the flaxseed/water mixture and milk mixture to the dry bowl and mix.
Add to your waffle maker ¼ cup (approx. 60 ml) mixture for each waffle. Please see the instructions of your waffle maker regarding cook time. For the Cuisinart Griddler, set on 380 F and cook for five minutes.
