Oat flour mix waffles

Equipment

  • Griddler

Ingredients
 
 

  • 4 tbsp ground flaxseed
  • 12 tbsp water
  • 1 cup rolled oats ground
  • 1½ cup whole wheat flour
  • 2 tbsp apple cider vinegar
  • 2 tbsp baking powder
  • 2 cup almond milk or your favorite plant-based milk
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¼ tsp ground cinnamon
  • 8 oz applesauce
  • 1 tsp maple syrup

Instructions
 

  • Mix the water and flaxseeds and let it sit for 10 minutes.
  • Add the rolled oats in the food processor and mix for 1-2 minutes until the oat flour is obtained.
  • Mix the apple cider vinegar with the plant-based milk in a bowl. Stir for about 30 seconds.
  • Add the applesauce, vanilla extract and the maple syrup to the milk/vinegar bowl and stir.
  • Mix the oat flour, whole wheat flour, baking powder, salt and ground cinnamon in a separate bowl. We'll call this the dry bowl.
  • Add the flaxseed/water mixture and milk mixture to the dry bowl and mix.
  • Add to your waffle maker ¼ cup (approx. 60 ml) mixture for each waffle. Please see the instructions of your waffle maker regarding cook time. For the Cuisinart Griddler, set on 380 F and cook for five minutes.

Notes

  • Serve with your favorite fruit and syrup.
  • You can also add some walnuts or pecans to your plate.
