
Rainbow bowl
Rainbow bowl with delicious lime-peanut butter sauce
Ingredients
- 8 oz brown rice noodles
- 1 romaine lettuce
- ¼ red cabbage medium size
- 2 carrots medium
- ½ bell pepper red
- ½ red onion
Facon (tempeh bacon)
- 10 oz tempeh
- 3 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp liquid smoke
- 1 tsp maple syrup
Lime-peanut butter sauce
- 5 tbsp peanut butter unsweetened
- 2 tbsp lime juice about three small limes
- 1 tbsp soy sauce
- 1 tbsp maple syrup
Instructions
Tempeh-bacon
- Heat the oven at 380 °F (approx. 195 °C) on the convection bake setting.
- Cut the tempeh in cubes of 1 cm length size.
- Mix the soy sauce, garlic powder, maple syrup and liquid smoke in a container. Place the tempeh in the container, close and mix well. Let it sit for about 5 min to marinate.
- Place the marinated tempeh on a baking sheet and bake for 20-25 min.

Veggies and sauce
- Cook the noodles according to the package instructions.

- Dice all veggies and place them in separate bowls.

- Prepare the sauce by mixing all sauce ingredients and add water gradually to reach the desired consistency.

- Assemble the bowl.
