Instructions
Chop the veggies and add these to a pot with a little bit of water and salt. Saute for 5-7 minutes.
Add the lentils and the rest of the water to the pot and simmer for about 25 minutes or until the lentils are tender.
Notes
You can substitute the water with vegetable broth.
Add freshly ground pepper to taste.
Serve warm with
whole-wheat bread.
